Purveyors of modern Filipino fare Spoon & Pork will open a brick and mortar location early next year. The 1,300 square foot Silver Lake storefront will include patio dining on Sunset Boulevard, according to proprietors Ray Yaptinchay and Jay Tugas. “We have a loyal following and we wanted to scale up our business and serve more people,” says Yaptinchay. “We were limited in the food truck. Opening a brick and mortar opens more possibilities for us,” added Tugas.
The menu will stay largely unchanged from what they served on the truck, including standbys like the Adobo Belly Nigiri slow-cooked pork belly with an adobo glaze served over rice, and the Chori Burger, house-made Filipino pork chorizo on a toasted Hawaiian bun. The duo will also be adding a few new items including deep-fried short ribs and pancit (stir-fried Filipino noodles). “Our dishes are inspired by the different cultures that surround us. We serve Filipino food reimagined.” says Yaptinchay.
“Los Angeles right now is ground zero for the whole Filipino food movement,” adds Tugas. “People are more open to trying Filipino food… we get inspired daily [by] what we see and eat in the city.”
